You should use the newer version of remastersys from now on as you used REMASTERSYSVERSION="3.0.0-1"
In the system menu there should be an Install option.
If not, open a terminal window and run "sudo ubiquity"
If it says it can't, try this:
sudo apt-get install ubiquity-frontend-gtk
then
sudo ubiquity

I'm having a similar problem.
I had an Ubuntu Server 12.04 installation running services like Nagios3, Webmin, etc.. I made the iso with Remastersys and made a bootable LiveCD from it.
LiveCD works perfect, but when I select the Install option, it just loads up like a LiveCD. Even if it put in sudo ubiquity, nothing happens - just get the prompt again. If I do the sudo apt-get install ubiquity-frontend-gtk it just tells me the latest version is already installed.
Pls help.

I have had a great deal of difficulty pinning down the direct install issue.
As soon as I finish with the debian versions of remastersys for squeeze and wheezy I will look into this.
