3.4 has better support for newer hardware, basically.  The Fast Track Pro patch is included upstream, and the build scripts for making .deb packages are much improved, so it's a much easier kernel for me to manage than 3.0 has been.  This build also includes the rt-preempt patch, so there could potentially be some low-latency performance changes (it might work better, it might not work as well).  It should work with proprietary video drivers too, though some NVidia hardware does have problems with the rt patch and the proprietary drivers.

If 3.0 is working well on your current setup, the only reason to upgrade to 3.4 would be for testing and/or fun.  So far, I've heard mixed results from AVLinux users.  Personally, I seldom use 3.4, because it happens to break wifi on my laptop.
