So I want to install grsync and at a different time, wordpress. They're both in the repositories, but when I try to install them with synaptic, I get some weird warnings. Synaptic informs me that installing grsync will remove over 20 packages, install more than 150 more and upgrade 100+ packages. I get similar warnings for wordpress with even more removals, installations and upgrades. I can't possibly know what this will do to my system. Can I install just these things with apt-get or aptitude without descending through all the levels of dependency hell?

Well, when I'm trying to install grsync it only wants to install ssh-askpass as a dependency.
Also I don't understand, why you would install WordPress on your system. As far as I know WordPress has to be installed on your webspace (I run it on AV-Linux.de). Its not necessary to install it on your system. You will have an admin account after installing Wordpress (well, it's rather kind of copying than installing, because its just PHP code and java script), where you can manage all of your posts, sites and links. Also the repo has not the newest version. Wordpress 3.5 is the most recent version.
WordPress will install on your system Apache server, a php mailer, a perl daemon, mysql client and other tools you will need to manage your blog (e.g. cropping images, editing posts,) and the whole php stuff WordPress needs to run. In my opinion it makes no sense to create your posts offline with a local Wordpress and then upload it. You will need to make some formatting and SEO, that has to be done online, because it depends on the server configuration of your web space provider.

Sounds like you may have the 'Wheezy' repositories enabled, make sure you only have the 'Squeeze' and squeeze-backports repositories enabled by using the 'Software Sources' application in the 'Preferences' menu.
