So... how do I add a program to the Audio menu when in Remastersys control panel>Add program to your menu there is no "Audio" submenu to add it to?? "Add program to your menu" seems to think there is a "Audio/Video" subcategory in the user menu, but there isn't.

Can you please offer a solution to this?

I put it in the Audio/Video menu, then manually edit the file it creates.

When you use the Remastersys Control Panel to 'add programs to menu', it creates a .desktop file in /usr/share/applications for each program you add.  Edit the newly created .desktop files (as root).  Replace AudioVideo; with AudioEditing; or VideoEditing;  Save the file, and your menu should reflect the changes.
(There may be a better way to do this, this is what works for me.)

The problem with custom menus is they don't conform to the freedesktop.org established standards which is why AV Linux has quite a few custom launchers, also stuff like Demo-ware is usually not in any sort of Debian packaging format so stuff like launchers end up being manually added or in some cases I make them point to custom launch scripts etc. Like trulan has noted quite often simply editing or modifying an existing launcher in /usr/share/applications will get the job done. Anything that comes with the established 'AudioVideo' categorization will annoyingly display in both the Audio and Video menus so I created my own categories of "AudioEditing" and "VideoEditing" to differentiate them.
